Using shiitake mushrooms in a pasta dish

In this recipe, I use shiitake mushrooms. Why? Because they have a rich, compact season that complements creamy pasta perfectly. Remember my point early on that this recipe doesn't need meat? Well, merely try shiitake mushrooms and y'all'll meet why. Shiitake mushrooms provide thick, chewy, even so soft texture and add a "compact" component to this spinach pasta.

Although I dear shiitake mushrooms in this pasta, you, of class, can substitute all kinds of other mushrooms for shiitake. If y'all can't find shiitake, use portobello mushrooms or cremini mushrooms - both of these will be excellent substitutions for shiitake.

Substitutions

  • I use fettuccine noodles (wide long pasta). You lot can besides use spaghetti, linguine, angel pilus pasta. I do prefer to employ long pasta in this recipe vs. short pasta, such as penne. Long pasta makes a ameliorate presentation with caramelized onions, spinach, and mushrooms.
  • To make this pasta gluten-free, use gluten-gratis fettuccine or whatever other type of long gluten-free pasta. Gluten-free brown rice fettuccine will work great!
  • To make the cream sauce I use heavy cream + milk. You tin totally substitute half and one-half for that (in the same amounts).
  • Don't have shiitake mushrooms? Use portobello or cremini mushrooms.

Tips for making pasta sauce super flossy

Does your cream sauce clump as you're trying to make it? Or, does the sauce separate in the process? Here is how to avoid and set all these issues:

  • Brand sure your pan or skillet is very hot before you add together the cream sauce ingredients. In this recipe, this is achieved by caramelizing the onions offset, cooking the mushrooms, and then wilting the spinach - all in the aforementioned skillet.  This ensures that the pan is already very well heated.
  • Bring heavy cream and milk to a boil just for a 2d.Immediately, add shredded Parmesan cheese, make certain everything is boiling. So,immediately reduce everything to simmer. The signal in doing all this is again to make sure your cooking pan/skillet is hot enough to handle the sauce. The cheese simply will not cook properly if the ingredients are not hot enough. Bringing everything to a short boil and then reducing rut to simmer (low boiling, simply still humid point) ensures the melting of the cheese instead of clumping.
  • Go along stirring the sauce at all times. This ensures over again that the sauce is smoothen and has a consistent, even texture. Practise not continue to boil the cream sauce. Bring everything to simmer immediately later on reaching the humid point every bit described above.
  • If your sauce is besides thick after adding the cheese, thin out the sauce by slowly calculation milk (or one-half-and-one-half) while simmering the sauce. Make sure the sauce continues to simmer and does non come to a standstill, while you add milk to sparse it out.
